Yogurt Biscuits
These biscuits make a good base for fruit shortcake or topping for chicken potpie. They Freeze very well.
2 cups minus 1-tablespoon all-purpose flour (reserve 1 tablespoon) 1-cup plain non-fat yogurt 1 teaspoon granulated sugar 2 teaspoons baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt
1) In small bowl, combine 1 cup of the flour with the yogurt, Blending until very smooth. Sprinkle with sugar; cover Loosely with plastic wrap or a damp towel and let stand in a Warm place. 2) Preheat oven to 425 degrees. In a separate bowl, combine Remaining flour, the baking powder, baking soda and salt. Add to yogurt mixture, mixing until blended. Sprinkle work Surface with tablespoon reserved flour; turn dough out onto Prepared work surface and pat into an 8 x 6 inch rectangle. Cut into 16 even pieces. Spray baking sheet with nonstick Cooking spray; place biscuits on sheet, one inch apart. Bake 10 minutes; lower heat to 400 degrees and bake 10 minutes More, or until medium brown. Sweet Brown Bread
1 1/4 cups + 1 tablespoon whole-wheat flour I-teaspoon baking powder 1 teaspoon grated orange or lemon zest 1/2 teaspoon baking soda 1/2 teaspoon cinnamon 1/8-teaspoon salt 1/2 cup low-fat (1.5%) buttermilk 1 egg 2 tablespoons + 2 teaspoons molasses 2 tablespoons + 2 teaspoons firmly packed brown sugar Nonstick cooking spray .
1) Preheat oven to 375 degrees. Spray an 8 x 4 inch loaf pan With nonstick cooking spray. 2) In medium bowl, combine flour, baking powder, zest, baking Soda, cinnamon and salt. In another bowl, combine Buttermilk, egg, molasses and sugar. 3) Add molasses mixture to flour mixture, mixing quickly to Blend. Do not over blend. 4) Pour into prepared pan and bake about 35-40 minutes, or Until toothpick inserted near center comes out clean. Cool Thoroughly on a rack before slicing. 12 servings 1 point per serving
Pumpkin Apple Bread
2-cups all-purpose flour l/4 cup + 1 teaspoon granulated sugar I-teaspoon baking powder 1/2 teaspoon baking soda 1/2 teaspoon salt 1/2 teaspoon cinnamon 1 large egg 1-cup low-fat 1.5%) buttermilk 1 medium (6 ounce) apple, peeled, cored and grated 1/2 cup cooked pureed pumpkin or canned pumpkin puree 1-teaspoon confectioners sugar Non stick cooking spray
1) Preheat oven to 350 degrees. Spray a 9 x 5 inch loaf pan With non-stick cooking spray. 2) In large bowl, combine flour, granulated sugar, baking Powder, baking soda, salt and cinnamon. 3) In a small bowl, beat egg; add buttermilk, apple and Pumpkin. 4) Add egg mixture to flour mixture, and mix just until blended. Do not over blend. 5) Spoon into prepared pan and bake about 1 to 1 1/4 hours, or Until a toothpick inserted near center comes out clean. Cool For 10 minutes; turn out onto a rack and cool thoroughly. Dust with confectioners sugar and serve. 10 serving are ...3 points per serving
Banana Bread
1 1/4 cups all-purpose flour 2 tablespoons + 2 teaspoons firmly packed light brown sugar 2 1/4 teaspoons baking powder l/2 teaspoon salt l/2 teaspoon cinnamon 8 dried dates, chopped 6 dried apricot halves, chopped 1 egg 1 very ripe medium banana, mashed 1/4 cup skim milk Nonstick cooking spray - 1) Preheat oven to 350 degrees. Spray an 8 x 4 inch loaf pan ~ With nonstick cooking spray. . 2) In medium bowl, combine flour, sugar, baking powder, salt c~ And cinnamon. Add dates and apricots. 3) In small bowl, beat egg; add the mashed banana and milk. 4) Add the banana mixture to the flour mixture, and mix just Until blended. Do not over blend. 5) Pour into prepared pan and bake about 1 hour, or until a Toothpick inserted near center comes out clean. Cool Thoroughly on rack.

1 1/4 cups yellow cornmeal 3/4cup all-purpose flour 1 tablespoon + 1 teaspoon granulated sugar 2 1/2 teaspoons baking powder 1/2 teaspoon salt 1 egg 1 cup + 2 tablespoons low-fat (1.5%) buttermilk Nonstick cooking spray 1) Preheat oven to 400 degrees. Spray 9 inch square pan or a 12-muffin tin with no~sticks cooking spray. 2) In large bowl, combine cornmeal, flour, sugar, baking Powder and salt. In a small bowl, beat egg with buttermilk. ~ 3) Add buttermilk mixture to flour mixture and mix just until Blended. Do not over blend. 4) Spoon into prepared pan and bake 20-25 minutes or until Golden brown and toothpick comes out clean. Cool 10 Minutes on a rack; turn out and serve warm. 12 servings.3 points
Weight Watcher Biscuits
1-cup self-rising flour 1/2 cup skim~ milk or buttermilk (reduced fat) 2 tablespoons reduced fat mayonnaise Mix all together and spoon into eight muffin tins sprayed with Pam Or drop eight blobs on sprayed cookie sheet. Bake at 425 degrees until brown. 8 biscuits}.1 point per biscuit
