Chicken Cornbread Dressing
3 cups cornmeal
1-cup non-fat buttermilk
1 egg.
Mix all ingredients and bake until done. Let bread cool and
Crumble up, about 8 cups.
Boil chicken while cornbread is baking.
16 ounces chicken
1-teaspoon pours seasoning
1 onion (optional)
1-teaspoon salt
1 1/2-teaspoon sage
1/2 teaspoon black pepper
3 egg whites or Y2 cup eggbeaters
1 can of cream of chicken soup (98% fat-free)
1 can of cream of celery soup (98% fat-free)
10 3/4 ounces water (same as soup can)
1 can chicken broth (99% fat-free)
Mix all ingredients together and bake in 9 x 13 pan or casserole
Dish at 350 degrees until golden brown, about 1 hour.
12 servings 4 points per serving
 
Grilled Citrus Chicken
6 boneless skinless chicken breast halves (1  1/2pounds)
1/2 cup packed brown sugar
1/4 cup cider vinegar
3 tablespoons lemon juice
3 tablespoons lime juice
3 tablespoons Dijon mustard
3/4 teaspoon garlic powder
1/4 teaspoon pepper
Place chicken in a shallow glass dish. Combine remaining
Ingredients; pour over chicken. Cover and refrigerate 4 hours or
Overnight. Drain, discarding marinade. Grill chicken over
Medium-hot coals, turning once, until juices run clear, about 15 to18mintues

Chicken Salad

 2- 50z.cans SweetSue 98% chicken breast watered packed

5 tlbs light mayonnaise (I use Dukes Light Mayo)

1 cup Green Grapes " (Slice in halves)

Drain the chicken put in bowl then add mayo and then slice grapes and Curry powder to taste. Total points on whole bowl 16...

 Makes serving 4. Points per serving 4... This great to make sandwiches or just a dip with low-fat crackers.
